PICADILLO_

Ingredients:

  • 2 lbs Ground Beef
  • 1 onion (finely chopped) + 1/4 onion (for the sauce)
  • 3-4 Carrot, cubed
  • 1/2 cup of frozen peas
  • Potatoes, cubed
  • Vegetable oil
  • 2 tsp salt
  • 1 tsp Pepper
  • 1/2 tsp thyme
  • 1 tsp oregano
  • 1 beef bouillon seasoning cube

For the sauce:

  • 4 Roma Tomatoes
  • 3 garlic cloves
  • 1 ancho chili
  • Chipotle pepper
  • salt to taste

Instructions: 

1. Roast the tomatoes, garlic and ancho chili on a plank grill until they are slightly charred
2. In a large pot put 2 to 3 tablespoons of vegetable oil and sauté the chopped onion
3. Add the ground meat and break it with a wooden spoon and season with a teaspoon of salt
4. In the blender put the tomatoes, garlic, ancho chili (without seeds), 1/4 onion and a chipotle chili, salt, thyme and blend
5. Add the peas, carrot and potatoes to the meat and mix well
6. Once the meat is cooked, add the sauce mixture and add 1/4 to 1/2 cup of water (depending on how you like the sauce)
7. Season with salt and  beef bouillon
8. Let cook for 15 min (until the vegetables are cooked)
9. After cooking you may need to season with salt.
 
Serve and enjoy with warm and fresh Fiesta  tortillas and rice!
