Ranchero Cheese Ceviche: A Flavorful Fusion

Ingredients:

 

Sauce Ingredients: 

  • 1 bunch of cilantro
  • 1/4 cup of onion
  • 2 cloves of garlic
  • 2 Caribbean peppers 
  • 1 serrano pepper
  • 3/4 cup of lime juice
  • 1/2 cup of olive oil
  • 3 tbsp cream cheese
  • 1 tbsp chicken bouillon
  • Salt and pepper

For the ceviche:

  • 1 Cacique Fresco or Ranchero  cheese in cubes 
  • 5 raw tomatillos, cut into cubes
  • 1/2 bunch of chopped cilantro
  • 1/4 white onion
  • 1/4 purple onion
  • 4 chopped caribe peppers
  • 2 chopped serrano peppers
  • 2 avocados, cut into cubes
  • Salt and pepper

To serve:

Tostadas or corn chips
