Pink Paradise Delight: Refreshing Coconut Pink Lemonade Gelatine Recipe
Ingredients:
- 8 yellow lemons
- 1 cup of raspberries
- 1 cup of strawberries
- ¾ cup brown sugar
- 1 cup of hot water
- 1 liter of coconut water
- 3 sachets of powdered gelatin
- ½ cup of cold water to hydrate
Preparation:
- Hydrate gelatin: add gelatin to 1/2 cup of cold water, mix and let sit until it hardens.
- Cut lemons in half and remove the pulp with the help of a spoon and knife. Place the lemon peels in a muffin tin and place in the freezer while you prepare the recipe.
- In a blender add the pulp of the pitted lemons, sugar or hot water, blend well and strain.
- Blend the raspberries and strawberries until puree and strain.
- In a large jug add the lemon mixture, coconut water, and puree and mix well.
- Microwave the gelatin for about 25 seconds. until it melts and is liquid and transparent.
- Add the gelatin to the pink lemonade in the form of a thread and blend.
- Add the mixture into the lemon peels. Let it rest in the refrigerator until set.
