Delicate Mandarin Cake with a Burst of Citrus Elegance
Ingredients:
Cake
1/2 cup + 1 tablespoon unsalted butter (about 9 tablespoons), softened
1/3 cup sugar
A pinch of salt
1 tablespoon tangerine zest
2 eggs
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon vanilla extract
Syrup
1/4 cup powdered sugar
1/4 cup tangerine juice
Glaze
1/4 cup powdered sugar
1 teaspoon lemon juice
Preparation:
1. Preheat oven to 350°F.
2. In a bowl, beat the softened butter until smooth. Add sugar and salt, and mix well. Stir in the tangerine zest.
3. Add the eggs and mix until fully combined.
4. Add the flour, baking powder, and vanilla. Mix until you get a smooth batter.
5. Pour the batter into a greased pan and bake for 30–35 minutes, or until done.
6. Remove from the oven and poke small holes all over the cake.
7. In a small bowl, mix powdered sugar and tangerine juice to make the syrup. Pour it over the cake once it has cooled.
8. Mix powdered sugar with lemon juice to make the glaze, and spread it over the top.
