INGREDIENTS

  • 2 Tbsp. olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 cups parboiled rice
  • 3 Knorr® Shrimp flavor Bouillon Cubes, crumbled
  • 4-1/2 cups boiling water
  • 1 lb. uncooked medium shrimp, peeled and deveined
  • 10 mussels, well-scrubbed

    3 cups red and green bell peppers cut into strips

    1 can (14.5 oz.) diced tomatoes, undrained

    3/4 lb. cod or tilapia fillet, cut into ½ inch chunks

    1/4 tsp. Bijol or 3-4 threads of saffron (optional)

    1 cup peas

    1 tbsp of chopped cilantro

Step 1

In deep 12-inch skillet, heat 1 tablespoon oil over medium heat and cook onion, bell pepper and garlic, stirring occasionally, 2 minutes or until onion is tender.

Step 2

Add remaining 1 tablespoon oil and add parboiled rice, 1/4 tsp. Bijol or saffron threads, stirring frequently, until rice is golden, about 8 minutes.

Step 3

Add tomatoes, stir in Knorr® Shrimp flavor Bouillon Cubes blended with boiling water. Simmer covered over low heat 15 minutes

Step 4

Stir in shrimp, mussels and fish. Simmer covered 15 minutes or until rice is tender, shrimp turn pink and shells open. Discard any unopened shells.

Step 5

Garnish top with red pepper strips, peas and lemon halves
