Enjoy a homemade Costa Rican casado.
Ingredients:
- 4 pork chops
- Salt and pepper
- 2 cloves garlic, minced
- Vegetable oil
- 1/2 cup beef broth
- 1/2 white onion
- 1 tbsp Knorr® Seasoning
- 2 ripe plantains, peeled and sliced
- 1 small head of lettuce (Iceberg)
- 1 tomato, sliced
- 1 carrot, grated
- Vinaigrette for the salad
- 3 cups white rice
- 3 cups cooked black beans
- 4 fried or hard-boiled eggs
- 1 cup fresh cheese, sliced
- Tortillas
Preparation:
- Season the pork chops with salt, pepper, and garlic. In a skillet over medium heat, heat a couple of tablespoons of vegetable oil and cook the chops on both sides until done to your liking. Deglaze the pan with 1/2 cup of beef broth, bring to a boil, reduce to 1/3 cup, and set aside.
- In another skillet with oil, fry the plantains until golden brown.
- Meanwhile, combine the lettuce with the grated carrot, tomato, salt, pepper, and vinaigrette. Set aside.
- Serve each plate: one chop on each with a little of the sauce. On the side, put fried plantains, salad, rice, beans, a fried or hard-boiled egg, slices of fresh cheese, and tortillas.
