COSTA RICAN CASADO

Enjoy a homemade Costa Rican casado.

Ingredients:

  • 4 pork chops
  • Salt and pepper
  • 2 cloves garlic, minced
  • Vegetable oil
  • 1/2 cup beef broth
  • 1/2 white onion
  • 1 tbsp Knorr® Seasoning
  • 2 ripe plantains, peeled and sliced
  • 1 small head of lettuce (Iceberg)
  • 1 tomato, sliced
  • 1 carrot, grated
  • Vinaigrette for the salad
  • 3 cups white rice
  • 3 cups cooked black beans
  • 4 fried or hard-boiled eggs
  • 1 cup fresh cheese, sliced
  • Tortillas

Preparation:

  1. Season the pork chops with salt, pepper, and garlic. In a skillet over medium heat, heat a couple of tablespoons of vegetable oil and cook the chops on both sides until done to your liking. Deglaze the pan with 1/2 cup of beef broth, bring to a boil, reduce to 1/3 cup, and set aside.
  2. In another skillet with oil, fry the plantains until golden brown.
  3. Meanwhile, combine the lettuce with the grated carrot, tomato, salt, pepper, and vinaigrette. Set aside.
  4. Serve each plate: one chop on each with a little of the sauce. On the side, put fried plantains, salad, rice, beans, a fried or hard-boiled egg, slices of fresh cheese, and tortillas.
