Authentic Pozole to Feed a Crowd This Christmas

Ingredients:

    • 3 lbs pork roast, large cubes
    • 2 bay leaves
    • 1 head garlic
    • 1/2 onion
    • 3 cups hominy
    • Salt to taste

    Chili sauce:

    • 2 Chile ancho
    • 4 Chile guajillo
    • 1 tbs dried oregano
    • 2 garlic cloves
    • 1 tbs black pepper
    • 1/4 onion
    • 1 cup pork broth (from your pot)
    • 1 tbs chicken bouillon

Preparation:

  1. Cut the meat into cubes and place it in a pot with enough water to cover it. Don’t forget to add the bone, as it adds a lot of flavor. Cook the meat with the bay leaves, whole head of garlic, onion, and salt.
  2. Once the pork is cooked, skim off any impurities and add the 3 cups of hominy so it can begin to soften.
  3. Clean the chiles by removing the seeds, soften them in hot water, then remove from the water. Blend the chiles with onion, chicken bouillon, oregano, 2 garlic cloves, and pepper. Add about 1/4 cup of the meat broth to help form the sauce. Once blended, add the sauce to the pot with the meat.
  4. Let everything cook for at least one hour. Serve with lettuce, sliced radishes, lime, and corn tostadas.
  5. Pozole is perfect for these festive celebrations. Enjoy!
