Spice Up Your Taco Tuesday with Mouthwatering Chicken Tinga Tacos!
Ingredients:
- 1 lb. Shredded Chicken
- 2 cups chicken broth
- 1 onion, sliced in julienne
- 2 tbsp. oil
- 10 to 12 tortillas
- Oil for frying
- Fresh cheese
- Sliced lettuce
SAUCE
- 6 Roma tomatoes
- 1/2 small onion
- 1 garlic clove
- 1 tbsp. powder chicken broth
- Chipotle to taste
- 1 tsp. salt
Preparation:
SAUCE
In a pot with boiling water, place the tomatoes and a piece of onion. As soon as they are cooked (approximately 4-5 minutes), blend with the onion, a garlic clove, 1 tsp. of salt, the 2 cups of chicken broth, and one or two chipotle peppers. Set aside.
CHICKEN
In a pot, heat the oil and add the sliced onion and sauté.
Add the chicken when it starts to brown add the sauce.
Prepare the chicken tacos by heating the tortillas slightly to prevent them from breaking. Fill with the chicken and fold the tacos into quesadilla shapes and fry.
Serve accompanied by lettuce, cream, and cheese to taste.
